- 25ml Aurora Gin (from Orkney, a nod to Dunstane House’s Orcadian roots)
- 25ml Homemade rosemary infused cranberry syrup
- Bottle of Double Dutch Cranberry and Ginger Tonic
- Fill a rocks glass with cubed ice.
- Add the Aurora Gin and the Syrup.
- Stir with a bar spoon.
- Top up the glass with ice and add the Cranberry and Ginger Tonic to layer. The syrup should sit at the bottom of the glass.
- Garnish with a short sprig of rosemary.
