Ellenborough Park’s Christmas Cocktail is a festive concoction of sloe gin, Chase apple vodka and fresh apple juice finished with a blend of plums and blackberries foraged from the estate.
Add two blackberries and approximately a bar spoon of lightly stewed plums to a shaker. Muddle with 50ml of Chase apple vodka and shake well with plenty of large ice cubes.
Fill a hi-ball with crushed ice and strain vodka and berries over the ice. Top up with 25ml of fresh cloudy apple juice and mix with the bar spoon. Add a drizzle of sloe gin to the top and garnish with a blackberry dusted in icing sugar.
